DESCRIPTION:Join Chef Mateo in our teaching kitchen for a two-part class diving into the rich flavors and history of Indigenous and Mexican cooking by preparing blue corn tamales filled with nopalitos con Chile Rojo.  Rooted in tradition, students will connect through flavors, learning how to nixtamalize and prepare masa, develop a deep, rich chile rojo with tender nopalitos, as well as wrap and steam tamales to perfection.    \n  \n  \n  \n  \n  \n Date: This class has two sessions.  Must be available to attend both days!  \n  \n  \n  \n  \n Part 1: Saturday, Nov. 8 and  \n  \n  \n  \n  \n Part 2: Saturday, Nov. 15  \n  \n  \n  \n  \n Times: Part 1 and Part 2  \n  \n  \n  \n  \n 2:30 PM &ndash; 4:30 PM  \n  \n  \n  \n  \n Teaching Kitchen (201 W.
